[ Summary ] For maintenance hemodialysis patients who have completely lost renal function, proper nutritional management is required because malnourishment is directly linked to the prevention and treatment of complications, which influence patients' prognoses. The basic dietary therapy under the guidelines issued by the Japanese Society of Nephrology (JSN) has significance, in that it is relatively easy for patients to practice. However, despite the fact that dialysis is likely to cause nutritional deficiencies due to a combination of various factors, many dialysis patients receive nourishment below the standard nutritional levels set by the JSN guidelines. To solve this problem, improvements must be made to nutritional methodology, including cooking methods, and dietary supplements to achieve proper nutrition.
