[ Summary ] Evaluation of actual dietary intake is a fundamental issue in the nutritional assessment of maintenance dialysis patients. Calculation of protein catabolic rate, based on urea kinetics modeling, is a convenient and useful method for assessing protein intake. Salt intake can be calculated from intra-dialytic weight gain and changes in serum sodium concentrations, as well. For the evaluation of energy intake, there are, however, no biochemical laboratory methods, and direct investigation of actual dietary intake, such as diet diaries, combined with precise interviews with patients, photographs of the diets actually taken and counts of frequency of the foods taken is necessary.
