[ Summary ] Distinct regional variations in incidence and mortality of gastric cancer suggest that environmental factors including diet may be etiologically important. This paper briefly reviews the relationships between dietary and other environmental factors and gastric cancer, such as salt, fruit and vegetables, green tea, asbestos, ionizing radiation, and nitrosoamines.
