【 要旨 】 当院では1998年と1999年の2回，透析患者に対して調査を行ったところ，約50％の患者が在宅食事サービスを希望していた．希望価格の中央値は1食500円であった．そこで1999年2月に「食事サービスシステム研究会」を設立した．この会には企業38社が参加した．会は国際衛生基準・HACCPや国際環境基準のIS0 14001に対応したハードとソフトを研究し開発した．宅配食は1～2日をまとめてクール配送，アラカルト対応のセレクトメニュー，真空調理法により美味しくかつ自分の器に盛って食べることを基本とする．

[ Summary ] About 50% of dialysis patients desired Home Meal Replacements (HMR) according to our surveys in 1998 and in 1999. The cost that a patient wants to spend averages \500 per meal. As a result, the Home meal replacement System Service Association (HMRSSA) was established with the participation of 38 companies in February 1999. HMRSSA researches and develops food services that are designed to meet the guidelines of the international sanitation standards, Hazard AnalysisCritical Point (HACCP), and the ISO 14001 environmental standard. Research by HMRS SA includes the standardization of selected menus, chilled delivery of HMR, a cookchill system, and souvet.
